Parenting comes with its challenges—I have the pickiest eater in the world as a son! That has made me even more creative in the kitchen, finding ways to make meals that are both healthy and kid-approved.
After being diagnosed with pre-diabetes and high cholesterol, I made the decision to take better care of my health. I joined Weight Watchers and began reworking some of my favorite Pinterest recipes into lighter, lower-calorie versions that still deliver on flavor and comfort.
