Monday Night Moments & a Quick Beef Stir-Fry Win

Monday nights are honestly one of my favorites. There’s something about starting the week by slowing down just a little—sitting at the table, dinner in front of us, and actually connecting. Last night was one of those simple but meaningful evenings, chatting with my teen son about life… which mostly means hockey and volleyball these days. Not exactly deep philosophical conversations, but still so good for the soul. I’ll take it.
On nights like that, I want dinner to be easy, comforting, and something everyone actually wants to eat. This beef stir-fry checks all the boxes. It comes together beautifully, cooks up fast, and the flavors are seriously amazing for such a simple dish. Tender strips of beef, sweet peppers, and onions all coated in a savory sauce—it’s one of those meals that feels a little special without any extra effort.
I served ours over rice, which soaked up all that delicious sauce perfectly, but it would be just as good over noodles if that’s more your thing. Either way, this is a great go-to for busy weeknights when you want real food, real conversation, and maybe a little sports talk around the table too.

Ingredients
1 lb flank or sirloin steak, thinly sliced against the grain
2 bell peppers (red and green), sliced
1 large onion, sliced
1 tsp vegetable oil (instead of 2 tbsp)
For the sauce:
¼ cup low-sodium soy sauce
1 tbsp oyster sauce (or low-sodium alternative)
1 tsp cornstarch
½ tsp brown sugar or omit for very low sugar
2 garlic cloves, minced
½ cup low-sodium beef broth or water
½ tsp sesame oil (optional)
½ tsp black pepper
Instructions
Make the sauce: In a bowl, whisk together soy sauce, oyster sauce, cornstarch, sugar (if using), garlic, broth, sesame oil, and pepper.
Sear the beef: Heat oil in a large skillet or wok over high heat. Stir-fry beef until browned, 2–3 minutes. Remove and set aside.
Cook veggies: Add peppers and onions; stir-fry until just tender, 3–4 minutes.
Combine: Return beef to the pan. Pour in the sauce and stir until everything is coated and the sauce thickens, 1–2 minutes.
Serve: Serve hot over steamed brown rice, quinoa, or noodles.
