Recipe inspired using Epicure
Sundays, Sports, and the Meals That Save My Sanity
It’s been a Couple of days since I’ve shared any new recipes here, but today I’m excited to finally have something fresh to post! Sundays are probably the busiest day of the week around here—and that’s saying something.

Our day usually looks like this:
Volleyball from 11:00 AM – 1:00 PM
Goalie clinic from 4:00 – 5:00 PM
Hockey game from 7:30 – 8:30 PM
Now, I don’t have to attend every single event (thankfully), but I do have to make sure both my boys are fed, fueled, and ready to head out the door for the next thing on the schedule. And if you’re a sports parent, you already know—these days are not the days for complicated meals.

One of our go-to meals lately is this Cheeseburger Pasta. It has that classic Hamburger Helper comfort-food feel, but it’s made with better-for-you ingredients and comes together fast—huge win on a Sunday.
The recipe traditionally calls for ground beef, but I often swap it out for ground turkey or ground chicken, which works perfectly and keeps things lighter without sacrificing flavor. It’s hearty, filling, and kid-approved—which is really the ultimate test.
Even after a full, non-stop day of bouncing between gyms and arenas, we all sat down to eat, and it just felt… good. Full bellies, tired teen, and a moment to breathe before heading back out the door.
And to top it all off, my son’s team played outstanding tonight—one of those games where all the hard work really shows. Busy days like these can be exhausting, but they’re also the ones I know we’ll look back on someday and smile. Simple meals, packed schedules, and finding little wins wherever we can

Lightened-Up Cheeseburger Pasta (Healthier Version)
Serves: 4–6Vibe: Comfort food without the food coma
Ingredients (Healthier Swaps)
8 oz whole wheat or chickpea pasta (higher fiber, more filling)
1 lb extra-lean ground turkey or chicken (99% lean if you can find it)
1/2 cup skimmed Milk
¾ cup reduced-fat shredded cheddar (or light marble cheese)
1 tbsp Epicure Beef Seasoning (optional but adds depth)
1 tbsp tomato paste (instead of ketchup → much lower sugar)
Salt & pepper, to taste
Optional add-ins
Diced tomatoes, Pickles, Onion to top and garnish
Instructions
In a large non-stick skillet, brown the ground turkey over medium heat.
No oil needed if your pan is good
Stir in Epicure Cheeseburger Seasoning as per package directions, (replace Ketchup with tomato paste
Add cooked pasta (and veggies if using). Stir to combine
let simmer on Medium low for aprox 15 -17 mins (as per package instructions)
stir in Milk and cheese until melted and creamy.
