Well although I am posting this a little late… Thursday’s meal was spectacular. One of those dinners that surprises you with just how much flavor you can get from simple, lighter ingredients—and honestly, those are my favorite kind.

This creamy skillet chicken has quickly earned a spot on my repeat list. The chicken is first seared until golden, locking in all that juiciness, then finished in a velvety sauce made with Greek yogurt, garlic, and chicken broth. Topped with just enough melted cheese to feel indulgent without being heavy, every bite was comforting, savory, and incredibly satisfying.

A quick note: Greek yogurt can sometimes curdle if added directly to a very hot pan. To prevent this, make sure you reduce the heat before stirring it in, and whisk it in slowly until the sauce is smooth. This keeps the sauce creamy and silky instead of separating.

Now, a little confession… every time I use an oven-safe skillet, I somehow manage to burn myself. It’s like the skillet has a personal vendetta against me. 😂 This time I was adding a little extra no-fat Greek yogurt and—of course—I grabbed the handle to stir it in without putting on an oven mitt. Yep, I learned my lesson the hard way. But honestly, it was totally worth it because the sauce turned out perfect.

Ingredients (3–4 servings)

  • 3–4 boneless, skinless chicken breasts

  • 2 teaspoons olive oil (instead of 2 tbsp)

  • 2–3 cloves garlic, minced

  • 1 cup low-sodium chicken broth

  • ½ cup plain Greek yogurt 

  • ½ cup reduced-fat shredded Jack cheese (or a cheese of your choice)

  • Salt and pepper, to taste

  • Optional garnish: chopped green onions, paprika


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an oven-safe skillet if needed.

  2. Rub chicken breasts with olive oil and season generously with salt and pepper. Heat skillet over medium-high heat and sear chicken for about 5 minutes per side until golden brown.

  3. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth, scraping the pan to release browned bits. Reduce heat and stir in Greek yogurt until smooth.

  4. Top each chicken breast with reduced-fat shredded Jack cheese. Transfer skillet to the oven and bake for 12–15 minutes, until cheese is melted and chicken reaches 165°F.

  5. Remove from oven and garnish with chopped green onions and paprika. Serve hot.
