DIY Buffalo Sauce

I have to be honest… this recipe wasn’t planned. It was created out of pure necessity and a little bit of “I’m not running to the grocery store again” motivation. 😅I was getting ready to make my Buffalo Chicken Nachos, and realized I was missing the buffalo sauce. Instead of heading out last minute (because who wants to do that?), I decided to improvise with what I already had in the pantry.

And honestly? I’m so glad I did.

The Best Part? It Worked Better Than Expected

I used Epicure Buffalo seasoning, plain Greek yogurt, and a few simple ingredients to make a sauce that’s creamy, spicy, and perfectly tangy — all without the butter and added calories that traditional buffalo sauce brings.

It ended up being the perfect complement to the nachos, giving them that classic buffalo kick, but in a lighter, WW-friendly way. It’s the kind of recipe that proves you don’t need to make a special trip to the store to create something delicious.


Key Changes to make this a Light Bite

  • No butter (cuts calories & saturated fat)

  • Greek yogurt replaces mayo/cream (lower fat + more protein)

  • Hot water + seasoning instead of oil-based sauce

  • Simple pantry ingredients keep it low-calorie

  • Olive oil is optional (skip for 0 WW points)


Prep Time: 5 minutes

Yield: ~½ cup (8 tablespoons)


Ingredients

  • ½ cup hot water

  • 1–2 tbsp Epicure Buffalo Seasoning

  • 2 tbsp plain non-fat Greek yogurt

  • 1 tsp apple cider vinegar

  • 2 tbsp water

  • 1 tsp cornstarch

  • 1 tsp olive oil (optional)


Instructions

  1. In a small bowl, whisk together the ½ cup hot water and Epicure Buffalo Seasoning until fully dissolved.

  2. Pour the mixture into a small pot, then stir in the apple cider vinegar and Greek Yogurt

  3.  Whisk in the Greek yogurt until smooth and creamy.

  4. In a small bowl, whisk together 2 tablespoons water and 1 teaspoon cornstarch until smooth.

  5. Place the pot to low heat and whisk in the cornstarch mixture, cooking gently until the sauce slightly thickens.

  6. Stir in olive oil (if using).

  7. Taste and adjust seasoning, adding a splash of water if needed for consistency.

  8. Serve immediately or refrigerate for up to 5 days.
