Thursday nights tend to be busy in our house—and last night was no exception. My son decided to stay at a friend’s house after school and then head straight to hockey from there, which meant there really wasn’t much point in cooking a big, full-on family meal at home. With just me and the hubby around for dinner, I wanted something easy, comforting, and still aligned with our healthy goals.

Even though this is a dish we all love, it comes together so quickly and effortlessly that it made perfect sense to whip it up anyway. Minimal prep, minimal cleanup, and maximum flavor—honestly, that’s exactly what a busy weeknight calls for.

What makes this a light bite?

  • Chicken breast instead of thighs → less fat & cholesterol

  • Less oil → lower calories

  • Fewer yams + more volume-friendly veg → lower sugar & carbs

  • DIY sweet garlic seasoning → control the sugar


Ingredients

  • 1 small yam, peeled and cubed

  • 1 medium white potatoe peeled and cubed

  • 1 cup broccoli florets or bell peppers (optional but recommended)

  • 2 teaspoons olive oil

  • 1 lb boneless, skinless chicken breast, cut into chunks

  • 1 packet of Epicure's Sweet Garlic Chicken Seasoning


Preparation

  1. Preheat oven to 450°F (230°C). Line a sheet pan with parchment.

  2. Prep veggiesAdd yams and broccoli to a large bowl. Drizzle with olive oil.

  3. Add chickenAdd chicken breast pieces to the bowl.

  4. Make sauceWhisk together soy sauce, sweetener, garlic, vinegar, ginger, and pepper.

  5. Toss & roastPour sauce over chicken and vegetables. Toss until well coated.

  6. BakeSpread evenly on the sheet pan. Roast for 16–18 minutes, stirring once halfway, until chicken is cooked and veggies are tender.
