I went with this herb-crusted pork loin, which is full of flavor but surprisingly light, and paired it with garlic mashed potatoes and roasted asparagus. It’s a classic, comforting combination that feels like a special-occasion meal, yet it doesn’t leave you feeling weighed down afterward. By keeping portions in check and making a few smart swaps, it’s totally possible to enjoy hosting without derailing your goals.

Ingredients

For the Pork Loin:

  • 1 (3-pound) boneless pork loin roast (extra-lean if possible)

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup whole-wheat panko breadcrumbs

  • ¼ cup chopped fresh parsley

  • 1 tablespoon chopped fresh rosemary

  • 1 tablespoon chopped fresh thyme

  • 2 cloves garlic, minced


For the Light Apple Dijon Glaze:

  • ½ cup unsweetened apple cider or juice

  • 1 tablespoon Dijon mustard

  • 1 teaspoon honey (or sugar-free honey alternative)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Pat the pork loin dry with paper towels. Lightly brush with olive oil, then season with salt and pepper.

  3. In a small bowl, combine panko, parsley, rosemary, thyme, and garlic. Press herb mixture firmly onto all sides of the pork loin.

  4. Place pork on a roasting rack in a roasting pan (this allows fat to drip away).

  5. Roast for 20 minutes.

  6. Meanwhile, whisk together apple cider, Dijon mustard, and honey in a small saucepan. Simmer over medium heat for 5 minutes, until slightly reduced.

  7. Drizzle glaze over the roast and cook for another 15 minutes

Let rest for 10 minutes before slicing. Serve with your favorite veggies or a light mashed potato.
