Lightened-Up Chicken & Veggie Quesadillas

Another busy night in the Jackson house. Even though we had a pretty relaxed day, I somehow failed to make a plan for dinner—classic me. With my son’s hockey game on the schedule, we needed to be at the rink by 7 pm, and I knew there was no time for a complicated meal.

So I did what any busy mom would do… I pulled out a staple in our family dinner rotation: quesadillas.

Honestly, quesadillas are one of those meals that always feel like a win. My son loves them, which means there’s zero negotiation at the dinner table. And the best part? They’re so easy to keep on the lighter side by using low-carb tortillas and reduced-fat cheese, but still totally satisfying.


Why Quesadillas Are Our Go-To

They’re quick, customizable, and honestly—everyone gets exactly what they want. You can throw in whatever you have in the fridge, and in less than 10 minutes, you’ve got a hot, cheesy meal that feels like comfort food without the guilt.

This time, I added a little extra protein by using chicken, and loaded them with sautéed bell peppers and onions. The taco seasoning brings that familiar, bold flavor that makes it feel like a “real” dinner, not just a quick throw-together.


The Busy Night Hack

On the really busy nights, I don’t even stress about cooking chicken. I just grab the frozen pre-cooked chicken breast strips from Costco, heat them up, and toss them into the peppers and onions. It’s a total time-saver and still tastes amazing.


What makes this a Light Bite:

  • Low-carb tortillas reduce overall carbs and calories compared to regular flour tortillas

  • Reduced-fat cheese cuts down on calories and saturated fat

  • More veggies (peppers + onions) adds bulk and nutrients without adding lots of calories

  • Lean chicken provides protein without heavy fats

  • No deep frying or heavy sauces keeps it clean and simple

  • Portion control — you can make smaller quesadillas or cut them into wedges

  • Optional light toppings (Greek yogurt, salsa, avocado) instead of heavy sour cream

Ingredients

  • 8 low-carb tortillas

  • 1½ cups cooked chicken breast, diced or shredded

  • 2 cups reduced-fat shredded cheese (Mexican blend or cheddar)

  • 2 bell peppers, thinly sliced (any colors)

  • 1 medium onion, thinly sliced

  • 2 teaspoons taco seasoning (or to taste)

  • 2 teaspoons olive oil or cooking spray

  • Optional toppings: salsa, light sour cream, Greek yogurt, avocado slices, or fresh cilantro


Instructions

  1. Sauté the vegetables

    Heat olive oil in a large non-stick skillet over medium heat. Add the bell peppers and onion and sauté for 5–6 minutes, until softened and slightly caramelized. Sprinkle with taco seasoning and stir to coat evenly.

  2. Add the chicken

    Stir the cooked chicken into the skillet with the vegetables and cook for 1–2 minutes, just until heated through. Remove from heat and set aside.

  3. Assemble the quesadillas

    Wipe the skillet clean if needed and return it to medium-low heat. Place one tortilla in the skillet, sprinkle with about ¼ cup cheese, add a generous scoop of the chicken and veggie mixture, then top with another ¼ cup cheese. Place a second tortilla on top. You can also use a Griddle to speed things up...that is what I do most often.

  4. Cook until golden

    Cook for 2–3 minutes per side, until the tortillas are lightly crisped and the cheese is melted. Repeat with remaining tortillas and filling.

  5. Serve

    Slice each quesadilla into wedges and serve warm with your favorite light toppings.

Make It Even Lighter

  • Use grilled or rotisserie chicken breast for convenience.

  • Load up on extra peppers and onions and slightly reduce the cheese.

  • Serve with a side salad instead of chips.
